Linda’s Sandwich Shop kept loyal customers happy by dishing out their famous omelette cobs on Saltergate for many decades.

But now the popular shop has entered a new era after being refurbished and reopened as Lottie’s Sandwich Bar.

New boss and mum-of-three Charlotte Mitchell-Fox said she had received ‘wonderful’ feedback since opening this week from both returning and new customers.

“It was scary because you never know if people will come back,” Charlotte said. “But it has been overwhelming so far and we’re only just getting started.

“Our bacon, brie and mango paninis have been the most popular so far and one customer put a lovely review and picture online about it.”

The old Linda’s Sandwich Shop was a fixture on Saltergate for many years, and attracted both fans and players from the nearby former Chesterfield FC ground.

Chesterfield MP Toby Perkins was also a fan – tweeting last month that it was the ‘end of an era’ and he had just had a last omelette and mushroom cob at the ‘iconic’ shop.

“It had been there for decades and was a big part of the community,” Charlotte said. “We wanted to maintain that. I grew up around here and it was important to me.”

Charlotte, who has an events and marketing degree, said she ‘grabbed the opportunity with both hands’ when she found out the shop was to become available.

“Both my husband and I had worked in the catering trade recently and we wanted to work with people again,” she added.

Lottie’s has undergone a major revamp with some homemade, sustainable decor, card sales, reduced use of plastics, more local suppliers and plenty of new additions to the menu.

There are also initiatives such as 10 per cent off for NHS staff and loyalty cards.

The shop will be giving away 20 free bacon cobs, or veggie sausage cobs, for the first 20 customers between 9am and 10am to celebrate the grand opening on Friday, March 13.
