Our latest mouth-watering recipe is for homemade sausage and pickle rolls.
454g pack sausagemeat
3 tbsp pickle (85g)
4 sheets filo pastry (200g)
25g (1 oz) melted butter
1.Preheat the oven to 200oC, gas mark 6.
2.Mix the sausagemeat and pickle together in a large bowl.
3.Brush 2 sheets of filo with a little butter and lay on top of each other.
Divide the sausagemeat into two and roll into long sausage shapes to the width of the pastry sheets.
Place one sausage at the short edge of the filo and roll up. Repeat to make two long sausage rolls.
Brush with butter, trim the edges and cut each into seven.
4.Place on a lightly greased baking tray and bake for 20 minutes until golden. Transfer to a wire rack to cool.
A pack of sausages from the freezer can be used instead of buying sausagemeat, simply defrost then slash the skin with a knife and remove the meat.
Freeze the remaining pastry.
